Egg stew

Ingredients

Egg - 3
Potato – 2 medium
Onion - 1 (diced)
Ginger (minced) - 1tsp
Garlic (minced) - 1tsp
Green chillies slit - 3
Garam masala - 1tsp
Coriander powder - 2 tsp
Pepper powder – 1/2tsp
Thick coconut milk - 1 cup
Salt to taste
Curry leaves – a sprig



Preparation

Hardboil the eggs. Allow it to cool. Remove the shells and cut in to small pieces and keep this aside.

In a deep vessel, add oil and saute the onions and fry till brown. Add the ginger and green chillies and fry some more. Now add the potatoes, coriander powder and garam masala, and little water. Add salt and pepper and bring to boil on a medium heat. When the potatoes are cooked, add the eggs. Allow it to simmer for 1 minute. Add the thick coconut milk and the curry leaves. Stir well and remove from heat.
This dish taste best with bread and Palappam Also can be served with roti's and chapati's.


(Tips :Do not boil after adding the coconut milk. )

Onion Baji

Onions – l large
Gram flour - 1 cup
Chilli powder - 1tsp
Salt - As reqd
Oil for frying

Cut onions horizontally to quarter inch rings.
Make batter with gram flour Chilli powder ,salt and water.
Dip the rings in batter and fry both sides.
Drain on a paper towel.
Serve hot with tea.
(Tips:Batter should be thick just enough to coat on the Onions.)

Banana Fry

Ingredients

Banana(ripe) - 2 nos
Allpurpose flour(Maida) - 1 cup
Sugar - 1 - 2 tsp(optional)
Turmeric powder –a pinch
Cumin seeds - a pinch
Oil for deep frying



Mix together maida, tumeric, cumin, sugar and water to make a thick batter with a dropping consistency.Mix well, clear all lumps .

Slice the bananas to halves and then each halves to vertically thin pieces.

Dip the slices of banana in the batter and coat it very well with the batter.

Heat oil in a deep-fry pan and add the slices one by one, fry both sides.

Keep them on a tissue paper to remove excess oil.

Serve hot with Tea or coffee

Spicy Squid Fry

Squid – 2 lb
Onion(diced) - 1 no
Olive Oil - 2 tbsp
Green chillies - 2 nos
Ginger (minced) – 1 tsp
Garlic(minced) – 1 tsp
Turmeric powder - 1/2 tsp
Chilli powder – 2 tsp
Corriander powder – 1 tsp
Garam Masala – 1 tsp
Pepper powder – 1/2 tsp
Salt - As reqd
Curry leaves - A few





Wash and Clean the squid, separating the outer sacs from the heads and tentacles, removing and discarding the translucent cartilage, and small sand bag and ink. Rub salt on the outer sacs and rinse them inside and out with cold water. Cut the sacs into 1/2-inch wide rounds.

Heat the oil in a frying pan and saute onions,green chillies.When the onions become light brown,slip in the squid rounds,chilli powder ,coriander and pepper,garam masala,curryleaves and salt. Cover and simmer until tender (approximately 30 minutes).
